Sweet Tater Bananer Pancakes

For those of you who tried out the Daylight Saving Time Circuit, you also know that Luke came into the city to visit me for a little over a week. It felt so wonderful to have him here and show him around. My roommate had kept telling me in the weeks leading up to his arrival that everything in the city is a million times better when you’re with someone you love. She wasn’t lying, even simple things like waiting for a delayed train to come when you’re already running late hardly phased us. Or maybe it was because we used it as an excuse to take weird photos.

After looking through all the pictures we took, we were amazed at everything we had done. We spent a day at the Museum of Natural History (or as I kept referring to it, the Natural/National Museum of History).

We also had lunch in Central Park and enjoyed getting a taste of New York through several delicious restaurants.
We did a little a wine tasting and saw Luke’s favorite musical, Newsies, on Broadway which was absolutely phenomenal. I would highly recommend it anybody looking for an entertaining show full of some amazing talent.
Luke’s always wanted to say something in the Whisper Room at Grand Central Station. The room has a unique architectural design where you can stand in a corner and whisper something and the person on the opposite end of the room can hear you. So we whispered sweet nothings in each other’s ears (kind of) followed by a visit to the beautiful New York Public Library where Luke managed to climb on top of one of the lion statues outside.


We had brunch on a rooftop restaurant overlooking the Chrysler building and had another 3 hour brunch along the Hudson River while listening to a jazz band as they sang “Shy Guy” to me and Luke. It’s little things like that that made our week together yet another memorable one to add to the books.

One of the many highlights was being able to celebrate St. Patrick’s Day together, as this was the day we met and the day before Luke told his best friend and parents that he thought he met the woman he was going to marry. One of my favorite stories! Ironic that the same week he said that was spent a year later just casually looking at Tiffany’s Winking smile

I covered an event for Women’s Health that morning called Trimania Expo where I learned all about training for a triathlon in addition to many other tips and ideas for workouts and taking care of your body for any exercise. My favorite speaker was Paul Weiss, PhD, who spoke about overcoming the fear of swimming in a triathlon and how to train for this specific event. Even though it was directed towards open water swims, I felt as if his message was relatable towards many exercise related  fears or trying something new and he applied quite a humorous approach to his speaking. He mentioned how people tend to be afraid of open water swimming because they are afraid that monsters and dead people are going to come up from the bottomless waters and grab you, taking you down while the person in front of you kicks off your goggles so you are unable to see anything. Just about nailed one of the reasons I’ve been hesitant to even think about doing a tri! His tips for overcoming this included having confidence in yourself, lots of practice, and preparing yourself for whatever mishaps you think may happen.

Because it snowed, we weren’t able to catch the St. Patrick’s Day Parade which means we will have to go next year for sure! Instead, we met up with my friends Alex and John for dinner where we enjoyed an overly priced meal served on plastic plates and faux silverware. Note to self, do not go to an Irish restaurant on St. Patrick’s Day located in one of the busiest parts of Manhattan, Times Square. Rookie mistake. Though our waiter did pull off a mean Irish accent and we enjoyed running into a pack of leprechauns.

People really go all out on this holiday! We then went to meet up with another friend at a place in the Meat Packing District where we were able to go atop a rooftop overlooking the city and see the Empire State Building lit up green. It was without a doubt a very memorable St. Patty’s Day and beautiful celebration of the night I found a person who is spontaneous, outgoing, thoughtful, and makes me laugh and smile constantly every day since we’ve met.


Maybe it’s because I’ve been missing home a bit more than usual lately, or maybe it is simply because I have a tremendous love for sweet potatoes, but I’ve been finding ways to incorporate these delicious vegetables into many of my meals lately.

Five reasons to include sweet potatoes into your daily diet

1. First off, they are loaded with the vitamin B6. Perfect reason to have them highlighted on my blog! They also contain  a significant amount of your daily recommended dose for vitamin A which aids in anti-aging effects for your skin.
2. They also contain high levels of vitamin D which helps maintain your bones, teeth, heart, nerves, and skin healthy and also helps boost your mood and energy.
3. If you’re looking for a way to relax or remove stress from your life through your diet, look at the amounts of magnesium you are taking in. Magnesium is the “anti-stress” mineral and sweet potatoes are an excellent source of this.
4. Because they are loaded with carotenoids, they help to strengthen your eyesight and boost the immune system.
5. They are also a great source of energy because their natural sugars are slowly digested and absorbed into your body, allowing you to use this energy for a prolonged period of time.

It’s easy to pair them with lunch and dinner, but I decided to rise to the challenge and see if I could fit them into my breakfast somehow. Challenge accepted!

Breakfast has always been one of my favorite meals and I also think it’s one of the most important meals of the day. I feel like your breakfast helps dictate the type of day you will have. If you start out feeling energized and off to a good start as opposed to sluggish and weighted down, you’re more likely to have a productive, efficient, and overall better day. Sweet Tater Bananer pancakes are a great way to start your day. Or at least they made my Saturday pretty san-fran-tastic!

Chop the sweet potato into small slices and boil them until soft. Combine this with the banana and wet ingredients and blend until smooth. Then, mix the dry ingredients in a separate bowl and slowly stir together. Cook for a minute or two on each side until they are a beautiful golden brown and top with sliced almonds if you want an extra bit of protein and flavor. I also will mix in a little agave nectar if I want it just a little sweeter, though the banana is a nice natural sugar to make it sweet anyways.

I had these after I took Powerstrike Saturday morning (my latest obsession!) and found these to compliment my morning quite well. They refueled me for a long day running errands and also kept me full without making me feel stuffed. I typically cut this recipe in half if I haven’t worked out beforehand or if I’m not as hungry, as the whole recipe will make about 4 small pancakes.

Daylight Saving Time Circuit

     Out of the 365 days in the year, there are only a couple that are my absolute least favorite. One is the day after Christmas, because you have put so much time, effort, and thought into a day that lasts for 24 hours and then it is all over. As a kid, that was the worst day because the countdown for your favorite day of the year started all the way back to 365. But now as I have gotten older, I have started to really appreciate the value behind that one day that I have to spend uninterrupted time with my family. My other least favorite day tends to land somewhere in between the month of January and March. It’s never the same day but it’s typically a day where it’s overcast, maybe there is an inversion or it’s just plain gross, dark, and dreary outside. That’s the day where my bright little cheery self wants to tell winter to go hibernate for the next 9 months because I am done with it. This year that day landed in the middle of February when I fell in the middle of Broadway after slipping on some black ice. At that point I was done with winter!

     Daylight Savings is my last least favorite day. (Hey, three days out of 365 days is a pretty teeny number so I can’t complain!) Coming from someone who enjoys being the first one up and at ‘em in the morning so I can get the most out of my day, I don’t exactly appreciate an hour just magically disappearing from my day. I feel like I’m already being set up to have a non-productive day. It probably doesn’t help matters that Luke just arrived to the city yesterday, which makes it difficult for me to want to get anything done since I haven’t spent time with him in over two months! That’s a good excuse to have a non-productive day right?

     I figured to make up for this lack of productivity I would come up with a “Saving Time” circuit for those days where maybe you overslept or the alarm clock didn’t go off. Maybe you have a super busy day and all you have time for is a quick workout but you still want to work up a good sweat. For all you people with little to no time to work out (or want your workout to consist of as little time as possible), this goes out to Y-O-U!
